La Cornue Hood Filter Care for Efficiency and Safety

A hood filter catches grease from the air before it reaches the fan and duct. When the filter loads up with grease, airflow drops, the fan works harder, and grease collects where it is harder to reach. The CornuFe hood collection guide, which covers the Cascade, Euclid, Marquee and Loge hoods, says to clean fans frequently so grease does not build up on the fan or filter. It also says to turn the hood on for high heat or flambe cooking.

There are two kinds of filter to tell apart. Stainless baffle filters, used on the CornuFe hoods, and grease filters on the Chateau motorized hood are washable. HP4 carbon filters, used only when the hood recirculates air, are a different item with a different routine.

The CornuFe guide says baffle filters should be cleaned regularly, and more often with heavy use. It allows a dishwasher wash with the detergent inlet holes facing up, and says the filters must be fully dried before reinstalling. The Chateau motorized hood guide gives a specific interval: grease filters by dishwasher or hot detergent water every 2 months or sooner. That hood’s controller also signals filter cleaning by flashing all six indicators after 30 hours of running, and the signal is reset with the RUN ON TIMER control.

Use the interval in your own manual as a ceiling, not a target. If you sear, fry or cook with a wok often, the filter will load faster than a calendar suggests.

A practical routine is to pick a reminder that fits how you cook. Wash after a stretch of heavy frying, after a holiday of long roasting sessions, or when you notice a greasy film on the underside of the hood. Handle the filter by its frame, and rinse out any loosened grease before it reaches the sink or dishwasher drain. Slide the filter back only when every channel is dry, since trapped water can leave spots and a damp smell on the first use.

If your hood does not vent outdoors, it uses HP4 carbon filters. The Chateau guide says they are washed in the dishwasher, then dried in an oven for 1 hour at no more than 200 F (90 C), and that they are consumables. That means they wear out and are eventually replaced, not restored. The G4 range guide also says not to use air-recycling systems, so check which setup your kitchen actually has before assuming which filters apply.

If suction is still weak after the filters are clean and dry, the duct is the next place to look. The CornuFe guide says undersized or poorly installed ducting causes static pressure, rattling, noise and inadequate ventilation. It recommends rigid metal duct, short direct runs and few elbows. The Chateau guide says duct design is the biggest factor in performance, and that more than two 90-degree bends degrade extraction noticeably. Those are installation facts, and a hood that never performed well after installation points that way.

The Chateau hood guide also notes that strong extraction can create negative pressure in a room, which affects fuel-burning appliances. If there is any doubt, it advises providing make-up air or not running both together.

One more clue is the sound. A hood that was quiet and now rattles may have a loose filter that is seated badly after cleaning, so remove and reseat it before suspecting the fan. A hood that pulls well on low but weakly on high may be limited by a duct, not by the filter itself.

Turn the hood off and let it cool before removing filters. Do not spray cleaner into the motor housing, and do not flambe under the hood; the Chateau guide says not to. Never run the hood without its filters in place. Brass trim should be handled with gloves, because fingerprints can etch it permanently, and the CornuFe guide notes the brass trim is not covered by the warranty.

Opening the housing, testing wiring or replacing built-in LEDs is not owner work; the Chateau guide says the built-in LEDs are not user-replaceable.

If the hood still performs poorly, a short record helps. Write down the hood model name, when you last washed the filters, whether it vents outdoors or recirculates, and whether any indicators are flashing. Also note the speed settings where the problem appears. That information separates a filter question from a duct or fan question and keeps the visit focused.
